The best Vegan Mozzarella cheese that melts, browns, stretches and is insanely creamy like the finest Mozzarella di Bufala you have ever had. Perfect for Caprese salad, pizza and any pasta bake.

Ingredients

– 2 cups cashew milk (or full fat canned coconut milk) – 1/3 cup firm tofu crumbled – 1/4 cup refined coconut oil – 3 tbsp tapioca – 1 tbsp + 1 tsp agar agar – 1.5 tbsp nutritional yeast – 1 tsp sea salt – 3/4 tsp garlic powder – optional: for a smoked version simply add about 1-2 tsp liquid smoke into the mix

1. Blend – Place all the ingredients in a powerful blender and process until smooth.

2. Simmer – Simmer for a few minutes until a thick stretchy texture is achieved.

3. Chill – Place in ramekins or molds, then transfer to the fridge until set. Enjoy!
