This vegan split pea soup recipe Is made with creamy split green peas, golden potatoes and infused with a subtle layer of smokiness from a dash of liquid smoke.

Ingredients

– Dried split peas – Olive oil – Onion – Carrot – Celery – Garlic – Vegetable broth – Bay leaf – Thyme – Salt – Black pepper – Lemon juice – Parsley

1. Rinse and sort the split peas, then set aside. In a large pot, heat olive oil over medium heat and sauté onion, carrot, and celery until softened.

2. Add garlic and sauté for another minute. Pour in vegetable broth and add the split peas, bay leaf, and thyme.

3. Bring to a boil, then reduce the heat and simmer for 45-60 minutes, or until the split peas are tender.

4. Remove the bay leaf and season the soup with salt and black pepper to taste. Use an immersion blender or transfer to a blender to puree the soup until smooth.

5. Stir in lemon juice and garnish with chopped parsley before serving. Enjoy your delicious vegan split pea soup!
