Lemon Quinoa Cucumber Salad Recipe

Lemony quinoa cucumber salad recipe with crunchy cucumbers, parsley and hemp hearts. Protein loaded, super easy to make, oil-free and good for you. The best ever!

Ingredients:

golden quinoa

hemp seeds

filtered water

scallions

Italian Parsley

lemon

Persian cucumbers

sea salt

black pepper

Bring the rinsed quinoa with the water and a good pinch of sea salt to a simmer over medium high heat.

Cover with a lid, reduce the flame to low and cook for about 10 to 15 minutes until all the water is absorbed. 

Remove from heat and allow it to sit covered for 10 minutes. Fluff with a fork and refrigerate until chilled.
