Lentils

Lentils are a big part of a plant-based lifestyle, they are very easy to cook, healthy and nutritious. From comforting soups and stews to loaves, spreads and even salads.

The disk shaped supernatural legumes come in different colors: orange-reds that cook very quickly and easily turn into mush, so save those for pureed soups; the green French and black Beluga hold their shape nicely and are best used in salads like this all time favorite Cucumber Tomato & Lentil Salad.

There are about 50 different variety of lentils, they are loaded with soluble fiber and protein: 1 cup lentils contains 18 g of protein and 16 g of fiber. Unlike beans they do not need any presoaking and are ready under 30 minutes depending on the variety used.
