Cucumber Lemonade

Like a mocktail that is actually good for you and your skin, this easy delicious lemonade is going to be your new best friend all summer long.

Fresh Mint. Refreshing Cucumbers. Zesty Lemons! (Do not use store bought lemon juice here).

If you are feeling adventurous I dare you to add a spicy jalapeño or two into mix. Or just add a couple of slices floating over the top in each glass when serving. It’s bold and fabulous!

There is absolutely no cooking involved! All you need is a powerful blender or food processor to puree the ingredients into a smooth texture beverage reminiscent of aqua fresca. Actually I’m pretty sure that technically speaking this is a cucumber aqua Fresca after all. Ha! Whatever you want to call it is fine with me!

 

In the Mood for a Cocktail?

All you need to do is add a splash of your favorite rum or vodka to your lemonade and voila! Happy hour like a boss, don’t forget to give yourself a very generous tip!

Make it Refined Sugar Free

To make the recipe whole food plant based compliant you can sweeten it with a few dates, maple syrup or date syrup or a touch of coconut nectar. Have some fun by adding a couple of tablespoons of chia seeds into the mix as well. Stay deliciously hydrated and refreshed, take it to the potluck, bbq or garden party and share with all your friends.

Cucumber Mint Lemonade

Raw, healthy and refreshing cucumber mint lemonade recipe to help you stay deliciously hydrated during the hottest summer days.

Ingredients

  • 4 lemons -peeled & seeds discarded
  • 1 lemon (sliced for garnish)
  • 1/2 English cucumber -sliced
  • 1/2 English cucumber -diced
  • 5 sprigs fresh mint (leaves only) +some for garnish
  • 6 cups filtered water
  • 1/3 cup maple syrup, agave or coconut nectar (or to taste)

Instructions

  • Add the diced cucumber and peeled lemons together with the mint leaves and maple syrup to a powerful blender or food processor. Add the water and blend until smooth to your liking. ( If using a food processor you might want to strain it at this point. If using a Vitamix there won't be any need for straining).
    Taste and adjust sweetness with more syrup or nectar.
    4 lemons, 1/2 English cucumber, 5 sprigs fresh mint (leaves only), 1/3 cup maple syrup, agave or coconut nectar, 6 cups filtered water
  • Transfer the lemonade to a pitcher with the reserved cucumber, lemon slices and mint sprigs. Serve over ice.

Notes

  • Add 1/4 cup of chia seeds to the lemonade to boost up the nutritional value.
  • If using a powerful blender like a Vitamix you won't need to strain the lemonade, it will be super smooth.
  • Make it Sparkling - For the best results follow the recipe as is and top with the a splash of sparkling water when serving, this way you don't run the risk of your lemonade going flat.

    1. Hi Jea, you will need a total of 1 English cucumber, you don’t have to measure/ weight anything, they are pretty similar in size and a little difference won’t affect the outcome of the recipe at all. Enjoy! ~ Florentina
